Eggplant Sambal (Sambal Terong) | Vegan

You need:

  • 1 - 2 eggplants
  • 2 small onions
  • 3 garlic cloves
  • 1 - 2 tomatoes (depending on size)
  • 1 chili (if you like it spicy)
  • 2 lime leaves
  • Salt to taste
  • 2 heaped tablespoons sugar
  • Oil for frying
  • Water to top up

Wow, eggplant with a difference! Cooked in spicy-sweet tomato sauce, this dish is a true gift to our taste buds. Not only is this method of preparation easy, but it also takes the flavor of eggplant to a new level. Eggplant sambal is vegan and served with rice, of course, it is especially nutritious.

Is it spicy?

Chilies are optional. Therefore, it is possible to make the dish suitable for children.

Let's go:

  • Cut the Eggplant into bite-sized pieces.
  • Give the Onions, the Garlic, the Chili and the Tomato/s into a blender or chopper.
  • Bzzz! Bzzz! Bzzz! Blend everything into a creamy paste.
  • Now give the Oil in a frying pan. When it is hot, add the paste and the Lime leaves to this.
  • Fry everything nicely for about 2 minutes until deliciously fragrant.
  • Give Salt and something Water added.
  • Now comes the Eggplant to it simmers with relish in the spicy sauce until it is nice and soft.
  • Attention! Challenge: Make sure you keep adding water if it evaporates too much. At the same time, your sauce should not be too liquid. A small challenge, but easy to master 😉
  • Finally give the Sugar and season with salt to taste.
